THERE’S something quite rewarding about making your own food – a real sense of achievement, especially when it tastes as good as it looks.

Giggling Squid’s new vegan and vegetarian menu launch, timed to coincide with Veganuary, was a mixture of the two – a mini masterclass in spring rolls followed by a lesson in making a passionfruit and lime cooler cocktail.

Then delicious main courses created by the talented chefs in the kitchen.

The restaurant on London Road in Alderley Edge, which opened last summer, is a real feast for the eyes as well as the tastebuds with bold, exotic prints around each room and beautiful flower walls.

It was the first outlet to open in the north west with 45 other venues spread across the country and more due to open over the next few months.

Husband and wife team Andy and Pranee Laurillard brought their Thai food to the UK 20 years ago, with the hope of creating a different Thai vibe, not like other Thai restaurants full of carved wood like a temple.

They wanted to wow people and they’ve managed to achieve their goal with guests leaving ‘feeling full and happy’.

The food on offer is delicious with vegan and vegetarian dishes alongside those filled with seafood, chicken and pork – we were spoilt for choice!

We opted for a Thai green curry with vegetables served with jasmine rice and the wholesome cashew nut stir fry with pad paak bong noodles.

They were the perfect blend of sweet and sour, hot and spicy and were bursting with flavours.

There’s an Isaan sharing platter with spring rolls, Thai spice rice balls, bamboo and goldenberry salad, tamarind mushrooms and greens which gives you a taste of all the starters on the menu – we can definitely recommend the spring rolls!

For main, you can opt for a curry - Thai red or green, Massaman or Paneang – and then there’s the stir fries – chilli and basil gra pao or a lotus flower fry with coconut rice.

Pad Thai noodles and pad paak bong noodles are popular choices and there are four different rice sides as well as pak choi and tenderstems, garlic pepper steamed noodles.
