EXOTIC food celebrating authentic Thai traditions and legends is now being served at a new restaurant in Cheshire.

Giggling Squid has opened its first outlet in the north west on London Road in Alderley Edge.

The Guardian was given a sneak preview of the vibrant, fresh dishes.

Sumptuous starters prepared by expert Thai chefs explode with flavour.

Salt and pepper squid, fried in a light batter is juicy and sweet.

Tiny parcels of Thai-spiced chicken, herbs and vegetables, served in crispy golden brown parcels are delicious, dipped in sweet chilli sauce.

Husband and wife Andy and Pranee Laurillard brought the buzz of enjoying Thai food together, to the UK 20 years ago.

Andy said: “We wanted to create a different Thai vibe, not like the rest of Thai restaurants full of carved wood like a temple.

“We wanted to wow people.”

The company, which now has 45 venues across the UK, prides itself on guests leaving ‘feeling full and happy’.

The restaurant has created 30 jobs for the local community, including six Thai chefs.

The name of the restaurant was inspired by their son.

Thailand-born Pranee said: “It was the nickname of one of our kids. He’s not keen on being called it now, surprisingly.”

Cheshire was specially chosen for this latest venture.

Andy said: “We’ve long had our eye on Alderley Edge, so we’re thrilled when a site became available.

“We choose locations on where we feel we can add value to the local food scene.

“We know Alderley Edge is a community of discerning foodies and we can’t wait to bring the buzz of Thai mealtimes to the area.”

Sharing meals with family and friends is central to Thailand, the ‘land of smiles’.

“Thai mealtimes are energetic, informal, adventurous and where food is celebrated,” said Andy.

“It’s relaxed and there’s no standing on ceremony.

“We simply want people to have a great time over something tasty.

“Every Giggling Squid has its own personal touch to it and this restaurant is no different.

“It’s a beautifully designed space that we hope will bring a lot of pleasure to our guests.”
