AS we continue to celebrate some of mid-Cheshire's finest pubs, this week we take time out to learn more about the Roebuck Inn in the beautiful village of Mobberley.

Can you tell us a little bit about yourself?

"My name is Andy Towers, and I am the Head Chef at the Roebuck Inn in Mobberley.

"I’ve been cooking at the Roebuck for nearly five years now.

"I’m 36, and have lived in Mobberley since I was 14 with a five-year spell in London to learn my craft working with some of the country’s top chefs.

How long have you been in the pub business and what do you love most about your job?

"I’ve worked in the hospitality industry for 10 years now, both front and back of house.

"I love that no day is the same and love the thrill of cooking a busy service.

"Working with seasonal ingredients makes no month the same, and I love the creativity that comes with creating a new menu."

What sets you apart from other pubs in the area?

"I love the charm and intimacy of the Roebuck. We take a European approach to our dishes and try to make every dish as full of flavour as possible.

"Our boutique bedrooms with French-inspired interiors bring guests to us who are searching for a quiet escape, and the food is a really special part of their stay.

"With country walks on our doorstep, the chance to explore Knutsford and Tatton Park, and a fantastic wine and cocktails list when they arrive back to us, we offer a very memorable UK break."

How do you feel your business have dealt with the last 18 months?

"We have embraced every challenge that we have been dealt with recently. It has been important to embrace positivity, from both a business and personal perspective.

"As soon as the first lockdown was announced, we converted the Roebuck into a ‘Pub-Hub’ shop and takeaway, providing a service to the local community.

"What began as a way of selling the vast amount of food and drink stock from our five sister pubs turned into a real community hub, and we soon found locals would visit us for the chance to talk to someone as much as they needed to buy eggs, milk and other essentials. 

"Our takeaway service became increasingly popular, and we were able to support lots of local suppliers by continuing to order from them throughout each lockdown."

What can you do to bring in even more trade?

"We created a small, permanent shop in our bistro selling wine, local produce and gifts.

"Last year, we created Christmas hampers and wine boxes which turned into a hugely profitable business in its own right, and we were overwhelmed with how many we sold.

"This year, we have created a brand new ‘Winter Picnic’ hamper, with amazing hand-selected local produce and treats, which will be available to order through our website The Roebuck Inn of Mobberley (roebuckinnmobberley.co.uk) soon."

What’s your own personal favourite tipple and why?

"I enjoy a glass of our Picpoul de Pinet after a day in the kitchen, or a negroni when I have a night off."
